Now this recipe only is suited for those who have a liking for oatmeal. This is an alternative way of bringing your two favorite breakfast items into one meal; pancakes and oats.
This can be a low carb and high protein meal for bulking or for cutting.
Things you need
- 2 bowls
- Cake beater or Whisk
- Non-stick Frying Pan
How To Prepare It
This recipe works in ratios, so if you want to add more eggs to the bran mix, then it’s 1:1 ratio. So 1 tablespoon of bran to every 1 egg white, 2 tablespoon of bran to 2 egg whites, etc.
First add your egg whites into one bowl. Whisk/Mix the egg whites until it’s fluffy. In the other bowl, add 1 tbsp of oat bran or how many tbsp you want of the oat bran. Then add about 1 tbsp of natural plain yogurt and 1 teaspoon of splenda brown sugar. Mix the yogurt and bran mix until you get a sticky consistency.
Second, add the egg whites into the bowl of bran and yogurt mix. Whisk the egg whites, bran and yogurt mix until a fluffy consistency.
Prepare your nonstick frying pan, by placing it on a low burner. Wait till the pot is hot and then add your scoop of your brand/yogurt/egg white/splenda, pancake mix. Wait till you see the bubbles come up on the pancake and then gently lift the ends to make sure that it’s ready to flip. Flip when ready and use a toothpick to check and see if it’s cooked.
Now, it’s going to come off darkish brown, so don’t think you’ve burnt it.
If you want to add another flavor to it, and still stay healthy, you can get yourself a flavored Greek Yogurt. This is very high in protein and low in carbs. I used a blueberry greek yogurt, giving me a little taste of blueberry in my pancake. It came out tasting like a blueberry muffin, along with a pancake oatmeal type breakfast.
I hope you enjoy this alternative! I will add more pancake like recipes, that are healthy and high in protein but low in carbs, soon. 🙂
